Tigist Reda, chef and owner of Chicago’s Demera, moved from his native Ethiopia to the Windy City over twenty years ago. By assisting the older ladies in her family, she was exposed to the intricacies of traditional Ethiopian cooking. When Tigist was older, she realized how much she enjoyed hosting parties and introducing others to her family’s traditions. After divorcing her husband, Tigist spent a few months planning and preparing to build Demera Ethiopian Restaurant, where she would serve traditional Ethiopian food.
